As Penn State football quickly approaches, what better way to start the season than announcing a Campbell-inspired ice cream flavor?
We asked our staff what they think his signature scoop should look like. From classics to creative ideas, this is what we came up with.
Madison Sosnowski: Matt CAMPfire S’mores
Creamy s’mores ice cream with chocolate shavings and graham crackers. I think this would not only be clever for tying in Campbell’s last name, but also, who doesn’t love a s’more?
This would be a fun way to create a signature ice cream flavor that really stands out.
Jamie Lynch: Campbell’s Cannoli Crunch
Matt Campbell surprised me a few months ago when he revealed that his burger concoction at The Field Burger & Tap was Roman-inspired. So, why not follow suit for his Creamery creation?
The base would be cannoli-cream-flavored and feature pieces of cannoli shell. There would also be a healthy serving of mini chocolate chips and a fudge swirl.
Italian food is my love language, and I absolutely LOVE how Matt Campbell is building this program. See what I did there? Bon Appétit, Coach.

Tomato Soup ice cream flavor because “Campbell’s Soup”.
Julia Romankow: Italian Hoagie Ice Cream
In recent years, it has become a trend to make odd and even savory ice cream flavors. Brands like Van Leeuwen’s have released savory ice cream flavors, such as mac and cheese or pizza. Some may argue that this is more for shock value than anything, but others might genuinely enjoy these wacky flavors.
This ice cream flavor is directly inspired by Campbell’s featured burger at The Field Burger & Tap, which is known for its specials that are crafted with the help of Penn State coaches.
“Coach Campbell’s Roman Burger” includes a beef patty topped with salami, mortadella, white cheddar, arugula, tomato, onion, mayo, and Italian dressing on a brioche roll, which is extremely reminiscent of an Italian Hoagie.
I think that taking the flavors of his signature burger and translating them into an ice cream flavor would be fun.
Melanie Thalhimer: Peanut Butter Chocolate Butterscotch
Based on the Iowa classic dessert, “Scotcheroos,” a fancy version of a Rice Krispies treat, this ice cream will surely be a hit in Happy Valley.
I mean, who doesn’t love Rice Krispies, Reese’s Pieces, or chocolate? Now imagine that altogether; I call that ice cream heaven!
Michael Zeno: Banana Cherry Flavored
I’ve personally never tried this flavor, and I’m not sure it would taste good, but maybe that’s a good analogy for a coach coming from a red-and-yellow school who has some questions about coming from a smaller program.

Peter Williams: Campbell Candy
Since we already have Peachy Paterno at the creamery, I think Campbell Candy would be the perfect complement.
It would be a fluffy cotton candy ice cream, maybe with a little vanilla swirl or some candy pieces mixed in to add extra texture. I have always loved the taste of cotton candy, mostly because I associate it with going to baseball games with my family when I was younger, so there’s already a little sports nostalgia built into it for me.
Also, during Coach Campbell’s time at Iowa State, he had a tradition of chewing cotton candy-flavored Bubblicious on game days, which makes this flavor the perfect connection.
Lyndsay Camp: Campbell Cookie Crunch
Put every single cookie the bakery makes into this ice cream flavor.
We have high hopes for this football season, and with a new coach, you don’t know what to expect, much like this ice cream flavor. Maybe many cookie flavors taste yummy together, maybe not. But who doesn’t love a good cookie?
